
Summery New Potato Salad with Mustard Dressing
Ingredients
- 500g New Potatoes Scrubbed and Halved
- 1 tbsp Wholegrain Mustard
- 4 Spring Onions - finely sliced
- 1 tbsp Clear Honey
- 2 tbsp Olive Oil
- 1 tbsp White Wine Vinegar
- 1 tbsp Low-Fat Mayonnaise
Preparation
Add the new potatoes to a pan of lightly salted boiling water. Cover and simmer for 15 minutes or until tender. Drain and return the potatoes to the pan.
Mix the rest of the ingredients together and stir in with the potatoes.
Allow to cool slightly then season to taste and serve warm.

Just loved this tasty recipe. So easy to do, plenty of taste and something different to how I would normally prepare potato salad. A shame that in Australia we can’t buy new potatoes so made do with my normal vareity.
