
Spinach and Tuna Potato Bake
Ingredients
- 1 large jacket potato per person
- Grated Cheddar cheese
- 1 Can of tuna in brine
- Small knob butter
- 4 oz Spinach leaves
- 1 Egg
- Horseradish
- Cream
Preparation
This is so easy but very tasty!!
I simply wash and prick a large baking potato. Cook in the micro for approx 5 mins till soft. Cool and cut in half. Scoop out the middle and put into a dish. Add the cheese and mash together. Quickly wilt the spinach in a fry pan, add the knob of butter. Add to the potato mix together with the egg, horseradish and tuna. Season to taste. Pile into the potato shell and bake in a hot oven for approx. 15 minutes.
I usually serve this with a nice crisp salad!
Tip
Most of the prep can be done beforehand and all assembled at the last minute!

I love jacket potatoes, but have never tried a recipe like this. Not a good cook but reckon I could manage this! Looks delicious will def’ try this at home.
I decided to try out this recipe as its definately different from just the plain cheese I usually have on my jacket potatoes & I must say it was absolutely delicious! It was so easy to make & took me no time at all, will defo have it again & it has inspired me to be a bit more adventurous with food!
I tried this and it took minutes to make and was tasty!
I made this for our tea tonight and it took me literally minutes to make and to demolish, will be making them again.
This is a great recipe. Quick and easy to make yet gobbled up by our (picky) teenagers!
