Potato Au Poulet
- 6/7 large potatoes
- jerk seasoning, baron green seasoning
- thin strips of cabbage
- large onion, celery and rosemary chopped
- olive oil, butter
- salt and black pepper
- sweet peppers, washed and julienne
- 2 boneless chicken breast
Wash potatoes and cut in squares, put in bowl and add salt, pepper and olive oil.
Place in a flat baking tray and roast in oven for 15mins.
Dice the chicken breast and season with salt, pepper, jerk seasoning and baron’s green seasoning (can get at the markets),
Place a frying pan on stove and add oil, allow to get hot first then add the chicken, sauté until cooked and kinda browning.
Add butter and onion, celery, rosemary and peppers, sauté then add roasted potato. Mix and ready to eat.
