
Masala Curry Potatoes with Cumin and Tomatoes
Ingredients
- 350g Waxy potatoes
- 400g Can of Chopped Tomatoes
- 1 Red Chilli finely chopped
- 1 tsp Ground Coriander
- 1 tsp Cumin Seeds
- 1 Chopped Onion
- 2 tbsp Fresh Coriander - Chopped
Preparation
Wash the potatoes and cut into 2cm cubes
Heat 1 tbsp oil in a saucepan and add the cumin and ground coriander and onion. Fry for 5 minutes.
Add the chilli and potatoes and season well.
Add 200ml water, cover and cook for 8 minutes.
Add the tinned tomatoes and cook uncovered for a further 5-7 minutes or until tender.
Stir in the fresh coriander just before serving.
Tip
Serve with tandoor chicken for a quick and tasty yet delicious Indian meal at home!
